Dolciva is a recent OP variety introduced by Sativa Rheinau in Switzerland. They focus on Open-Pollinated varieties, biodynamic and organic practices, and flavor, among many other traits. Dolciva is indeed flavorful, high in sugars, and has proven itself to Cultivating The Commons with its large beautiful Fall roots. Very comparable to the "standard" carrot: Bolero. Given loose and fertile soil, these carrots produce absolutely delicious roots to eat all winter! Harvest after a frost for best flavor.

Planting / harvesting notes
Direct sow as soon as the soil can be worked in the spring through mid-summer. Carrots prefer loose soil, free of rocks. Sow ¼-½ inch deep and consider thinning 1-2" apart in rows 18-24" apart. Harvest when carrots have good coloring and flavor.
Seed keeping notes
Allow the spent flowers to ripen into plump green seeds, and then dry on the plant until the seeds have turned papery. Harvest umbel by umbel, or take the entire flower stalk as all attached seeds are dry. Allow seed heads to dry out further in a protected place with good ventilation and low humidity. Thwack the seed heads inside a bucket, or pull them off. Remove chaff and allow seeds to dry further on a paper bag or towel. Store in a screw-top jar.
